Yogurt is made by fermenting lactose (milk sugar). In the past, for the first time, they came across this white and thick substance by chance. This bacterium converts lactose into lactic acid and gives it a jelly-like state. The sour and spicy taste you feel in yogurt is due to the presence of lactic acid in it.
